Quick and Nourishing Veggie Soup Recipe for a Happy Stomach

This is our wonderful body resetting veggie soup, so easy and cleans you out without needing to have a horrible painful detox diet.

After discovering the need to add many more vegetables into my diet and realising some is better than others for good balanced gut we created this soup recipe. So its origin is a Taiwan style clear egg soup recipe. All we did was upgrade it with some super gut healing veggies and created a very simple, very easy to make and extremely healthy soup that has become a staple in my house over the last 5 years. It literally saved me in so many ways! For those on the search for easy ways to improve your diet, I highly recommend this.

Ingredients:

  • Half a large brown onion, thinly sliced

  • 2 eggs, beaten

  • 2-3 Roma tomatoes, diced

  • Mushrooms (as desired), sliced

  • Kale (as desired), roughly chopped

  • 1.5 liters of water

  • 1.5 tablespoons of Himalayan pink salt (adjust to taste)

  • Optional: Additional meats of your choice

Instructions:

  1. In a saucepan, heat some oil (I prefer grapeseed oil these days) over medium heat. Add the beaten eggs and scramble them briefly. Then add the thinly sliced onions and sauté until slightly softened.

  2. Pour in the water (around 1.5 liters) and bring it to a boil. While waiting for the water to boil, prepare the diced tomatoes, sliced mushrooms, and chopped kale.

  3. Once the water is boiling, add the diced tomatoes and bring it back to a boil. Then, add the sliced mushrooms and allow it to boil again. Finally, add the chopped kale and let it cook for a short while until the vegetables are tender.

  4. Season the soup with 1.5 tablespoons of Himalayan pink salt, or adjust according to your taste preference and the accompaniment you'll be serving with it. Note that if you're serving the soup with quinoa, it may require a generous amount of salt.

  5. Once everything is cooked and seasoned to your liking, your delicious veggie soup is ready to be served. Enjoy its nourishing goodness and soothing effect on your stomach.

Note: Feel free to customize this recipe by adding other meats or ingredients of your choice to suit your preferences. The proportions provided are flexible, and you can adjust them according to your desired quantity. This recipe yields approximately 2 liters of soup, but it can easily be scaled up or down depending on your needs.
